Simple, tasty, minimal prep-work Avocado-Feta Dip!

 Avocado-Feta Dip

Ingredients:

  • ½ diced red onion

  • 1 diced seeded jalapeno

  • 1 diced avocado

  • 1  cup cilantro

  • ¾ cup crumbled feta cheese

  • ¼ cup lemon juice

  • 3 tablespoons olive oil

  • Sea salt, to taste

 

Method

  • Cook red onion and jalapeno in olive oil, six minutes

  • Puree with avocado, cilantro, feta, lemon juice and olive oil and salt, if desired

  • Serve with vegetable sticks (eg., carrot, celery, cucumber and bell pepper)
