Avocado-Feta Dip
Ingredients:
½ diced red onion
1 diced seeded jalapeno
1 diced avocado
1 cup cilantro
¾ cup crumbled feta cheese
¼ cup lemon juice
3 tablespoons olive oil
Sea salt, to taste
Method
Cook red onion and jalapeno in olive oil, six minutes
Puree with avocado, cilantro, feta, lemon juice and olive oil and salt, if desired
Serve with vegetable sticks (eg., carrot, celery, cucumber and bell pepper)
